Tapioca starch is a modified starch extracted from the tuberous roots of the cassava (manioc) plant. In culinary practice it is known as tapioca flour and is distinguished by its neutral taste and smell, which makes it suitable for a wide range of recipes.
The product has good water-binding properties and acts as a thickener in neutral, mildly acidic, and acidic environments, retaining its consistency after freezing and thawing.
Flavor and characteristics
Tapioca is tasteless and odorless, with a fine white texture, which allows it to be used in various dishes without altering their own flavor.
How to use it
Use it to thicken soups, porridges, sauces, creams, and pudding-type desserts, as well as in baking bread and pastries. As a rule, 1 tablespoon of tapioca replaces about 2.5 tablespoons of wheat flour, and in baked goods it can replace up to 20% of the wheat flour. It combines well with other gluten-free flours, especially coconut and potato flour.
